Introduction

Riz Cantonnais – also known as Cantonese Fried Rice – is a classic Chinese dish loved all over the world. It’s made with stir-fried rice, egg, chicken, and a variety of vegetables. Quick to prepare, incredibly tasty, and perfect for using up leftovers.

📝 Ingredients (serves 4)

  • 300 g cooked rice (preferably from the day before)

  • 2 eggs

  • 200 g chicken breast (diced)

  • 1 small onion (chopped)

  • 100 g peas (frozen or fresh)

  • 1 carrot (diced)

  • 2 spring onions (sliced)

  • 3 tbsp soy sauce

  • 1 tbsp oyster sauce (optional)

  • Salt, pepper

  • Oil for frying (e.g., sesame oil or sunflower oil)

👨🏽🍳 Preparation
1. Prepare the eggs
Beat the eggs and scramble them in a hot pan with a little oil. Set aside.

2. Cook the chicken and vegetables
Fry the chicken cubes in a bit of oil until golden brown. Remove from the pan.
Add onion, carrot, and peas to the pan and sauté for 3–4 minutes.

3. Add the rice
Add the cooked rice and mix well. Stir-fry over high heat.
Return the chicken and scrambled eggs to the pan.
Season with soy sauce, oyster sauce (if using), salt, and pepper.

4. Finish
Stir in the spring onions at the end.
Serve hot – either on its own or with sweet-and-sour sauce or extra soy sauce.

🍽 Tip
For a vegetarian version, replace the chicken with tofu. If you like it spicier, add some sambal oelek or chili oil.
