✨ Introduction

Lafidi, also known as Fouti, is a typical dish from Guinea and consists of mashed plantains served with a spicy tomato and chicken sauce. This dish is nutritious, aromatic, and perfect for a hearty lunch or dinner. It is easy to prepare and ideal for anyone who wants to discover authentic West African cuisine.

📝 Ingredients (serves 3–4)
🍌 For the Lafidi (Fouti):


6–7 ripe green plantains
Salt
Water
🍗 For the tomato chicken sauce:


500 g chicken pieces (e.g., drumsticks or breast)
2 large tomatoes or 3 tbsp tomato paste
1 large onion
2 garlic cloves
1 tsp ginger (grated)
1 chili pepper (to taste)
1 bouillon cube
Salt, pepper
2–3 tablespoons oil


👨🏽🍳 Preparation
1. Prepare plantains for Lafidi


Peel the plantains and cut them into pieces.
Cook in a pot with water and a pinch of salt until soft (approx. 20 minutes).
Drain the water and mash the plantains into a smooth purée (traditionally in a mortar or with a masher).
Form into small balls or mounds and set aside.


2. Cook the chicken sauce
Wash the chicken pieces and season with salt, pepper, and ginger.
Fry in oil until golden brown, then remove.
Fry the onion, garlic, tomatoes, and chili in the same pot.
Add tomato paste or fresh tomatoes and simmer for 5 minutes.
Return the chicken to the pot, add a little water, and simmer for 20–30 minutes until the meat is cooked and the sauce thickens.


🍽 Serving suggestion

Serve Lafidi warm, together with the tomato chicken sauce. Feel free to add an extra portion of sauce for a more intense flavor!

💡 Tip

For even more flavor, you can add some smoked fish or fresh herbs (e.g., parsley or basil) to the sauce.
